santa's on his way

This is the first year that Tristan has actuall interacted w/ Santa. Normally he is in tears and crying, but this year its all about the blue game (aka Rock Band). He was a little confused because he thought the game would be waiting for us at home today. One of my favorite Santa's ever and love that he even brings one of the reindeer.

I can't believe we actually got snow today in Houston!! its the second year in a row that its snowed here. After 5 minutes outside though Tristan said its too cold and ran back in. I think you can totally tell from the look on his face that he wasn't loving it at the moment. After a warm hat he was ready to play in the back yard though.

playing w/ textures

we have had such nice weather lately so it was great to get play out doors yesterday. T-man is so fascinated with Trains lately and every time we drive past this street he says - "Choo". Little guys knows exactly where it is.

I was so happy to get these pictures today, but really felt they needed a little something extra. So I went to my Flickr favorites gallery and played w/ some textures I had book marked. I was really pleased with the final outcome. (Texture opacity was set to 55%).

I have been wanting to play w/ adding textures to my photos for a while and finally found the perfect photo. I just love this picture of our little boy walking out to the beach - he was determined not to walk on the little trail and wanted to forge his own path - I added a texture overlay that was a free download from Flickr and can be found here. I just found this one too and it looks like fun

if you want to add one to your picture in PSE just drag the texture layer over your picture - the select the overlay layer in your layers menu. Then you adjust the opacity to the level you want (b/t 25-50 %). You can use the eraser tool if you want to erase the layer over a subjects face.

the other day T-man tried to give his cousin a hug and they both totally fell over and crashed. So we were a little nervous when T-man was trying to hug his cousin again, but this time on concrete. So we said hold his hand - I just love his cousin's facial expression. I think it so adorably sweet to see the friendship coming out between these two. The other day they had their own little conversation of babbling sounds and would crack each other up. Was so adorable to see them both laughing at each other and playing together with one another.

I made a quick trip to pottery barn to pick up some pillows for my MIL and of course I couldn't leave with out getting something. I have been wanting to freshen up our house for spring for a while so I can't wait to get home and decorate a little.

We found a "new" "old" toy - it was given to us from a friends little one - hence the old, but new to us because little man was a little too young to play with it before. He really love knocking the trains down on the floor the most, but I think we have many fun adventures ahead of us.

Here are some of the books I ordered and have on my "to read" list -

Really love the Unplugged Play - all kinds of games for kids grouped by age range so its easy to pick an activity that is age appropriate. Love that its games that don't cost much (if anything) and its games that require activity - not just pushing a button and watching something light up. So far the games that I have glanced at seem to be super easy, cheap, and should be fun. It has amazing reviews on line.

Wish you Well by David Baldacci - its seems a little different from his normal style but I do love his books and it was on sale at Barnes and NOble for $3.99 so I decided to give it a try.

The middle place by Kelly Corrigan. I saw a review on Stepanie Howell's blog and have had it on my to read list - the reviews on it were all really good.

I also just finished the first three books in the Odd Thomas series by Dean Koonz - I really enjoyed the main character and was amazed at how funny they were even though the guy is going through some tough things. I haven't always been a big Dean Koonz fan, but would definately recommend these.

I'm so excited. My hubby brought home some vintage suitcases for me (he really doesn't like clutter or extra stuff around so I thought it was extra sweet that he went to find them and actually brought them back home).

and of course I just had to put them to use right away. My little one LOVED climbing all over them - so much fun seeing him laughing and having a ball.

SuperBowl Recipies

We are planning on having some friends over for a SuperBowl Party. I'm almost hestitant to use the word party, because now that we are older and all have toddlers the definition of parties has definately changed from years before when we had kegs in the garage and random people wondering in and out. All things considered I'll take the now (toddler tantrums and all).

So here is what I have on my list so far:

1) queso - I add a little extra to mine - brown breakfast sausage and 8 oz cream cheese and add to the standard velveta and rotel to make a yummy updated queso

2) Stuffed Mushrooms - - mix browned sausage w/ auloutte cheese (I think I normally use the garden vegetable) and spoon mixture into mushroom caps. Sprinkle w/ parm. cheese and then bake in the oven for 15-20 minutes at 350.

3) Stuffed Jalepenos - I found this recipie on foodnetorkIngredients
15 jalapenos, preferably red, cut in 1/2, seeded and deveined
1 tablespoon canola oil
1/4 cup minced red onion
1/4 cup minced red bell pepper
3 tablespoons minced garlic
2 pounds mild Italian sausage, casings removed
2 cups mascarpone or cream cheese
1/4 cup grated Parmesan, plus more for garnish
Salt and pepper
1/2 cup shredded mozzarella cheese
Minced chives
Directions
Preheat oven to 300 degrees F.

Place jalapenos on a sheet tray and roast for 5 minutes. Remove from the oven and let cool.

Heat the oil in a medium saute pan. Add onions, peppers, garlic and sausage and cook for about 2 minutes. Remove and place in a large bowl. Cool to room temperature, then add mascarpone, and Parmesan. Mix ingredients thoroughly and season with salt and pepper.

Place approximately 1 tablespoon of mixture into each jalapeno half, and top with 1/2 teaspoon of mozzarella cheese.

Place the sheet tray of stuffed peppers in oven and bake for 5 minutes or until mozzarella cheese melts.

Garnish with minced chives and Parmesan

4) Spinach Artichoke dip - need to find a recipie

5) 7 layer bean dip - just layer refried beans, shredded cheese, sour cream mixed w/ taco seasoning, olives, tomatoes, lettuce & chives in a pan. Super quick and easy but ooh so yummy and popular at our house.

I really don't want to be in the kitchen when everybody is over so I like that I can prep these, get them ready and put anything that needs to warm up in the oven 15-20 minutes ahead of time and then enjoy the game with everybody. This is the one show where I don't want to miss the commercials.

I have to say the Footnotes project kit from Studio Calico has to be one of my favorite project kits ever!! I love the little blackboard elements and the stickers that coordinate and make using them really quick and fun.

Here is my book that I made using the kit - I was inspired by the Pottery Barn kids cataloug and Dr. Suess (which I would love to see a manufacturer come out w/ a fun Dr. Suess line)

Whats for Dinner

It really helps me budget when I plan our meals a week at a time. Then we just go to the store once a week (okay I say we, but I confess its normally my husband) and we are more likely to eat at home if I know what we are going to cook. Thought I would share what I'm thinking about for next week. I don't worry about what day I'm going to make what - if I at least have 4 meals planned then I can pick and choose what I feel like making

Chicken Enchiladas
Ingredients
3 cups chopped cooked chicken
2 cups (8 ounces) shredded Monterey Jack cheese with peppers
1/2 cup sour cream
1 (4.5-ounce) can chopped green chiles, drained
1/3 cup chopped fresh cilantro
8 (8-inch) flour tortillas
Vegetable cooking spray
1 (8-ounce) container sour cream
1 (8-ounce) bottle green taco sauce
Toppings: diced tomato, chopped avocado, chopped green onions, sliced ripe olives, chopped cilantro
Preparation

Stir together first 5 ingredients. Spoon chicken mixture evenly over each tortilla, and roll up. Arrange in a lightly greased 13- x 9-inch baking dish. Coat tortillas with vegetable cooking spray.

Bake at 350° for 35 to 40 minutes or until golden brown.

Stir together sour cream and taco sauce. Spoon over hot enchiladas, and sprinkle with toppings.

Chili -something I like during colder weather (and leaves leftovers for lunch). I just get the two alarm chili kit and add beans and my ground beef

Mushroom Pork Chops - this is one of my Mom's recipies that I love and is super easy - it really works best in one of the small crockpots, but I use my big one and just add extra cream of mushroom soup.

Place Porkchops in a crock pot and cover completely w/ cream of mushroom soup (in a big crockpot you'll probably need 2 cans) and add a box of fres mushrooms. Sometimes I'll sprinkle some extra Tony's in too for some seasoning. Cook for 6-8 hours and serve over rice.

Frozen Pizza - when we bake it on the pizza stone I bought years ago from Pampered Chef it tastes just like take out.

Got some quick pictures of my son tonight - The ones of him swinging are a little blurry but I do love the expression of delight while he swings.

I have finally found the best spot to take pictures in our house - right in front of our glass storm door. By far the best lighting we have in our house.

I finally got my mojo back and was able to get some scrapping done this weekend. I tried something new (for me at least) using some spray mist and I'm really loving it now. It did take me a little to trust myself to use it, because it is a little more random that my normal style, but I do think it helped me let loose a little and just work w/ the flow.

Apple Cheddar Pie

This is definately going on my to bake list for Thanksgiving - I know it sounds a little funny at first to mix cheddar and applies but I promise the combo is delicious. The recipie is from Martha Stewart Living everyday food.

Ingredients
Serves 10
4 tablespoons all-purpose flour, plus more for rolling
1 recipe Cheddar Double Pie Crust Variation
2 tablespoons fresh lemon juice
4 pounds Granny Smith apples
3/4 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
Directions
Preheat oven to 425 degrees, with rack in lowest position. On a floured piece of parchment paper, roll each disk of dough to a 14-inch round with a floured rolling pin. Transfer one round to a baking sheet for top crust; refrigerate. Wrap second round of dough around rolling pin; unroll over a 9-inch pie plate for bottom crust. Gently fit into bottom and up sides of plate (don't stretch dough).
Place lemon juice in a large bowl. Peel, quarter, and core apples; thinly slice crosswise, tossing with lemon juice as you work. Add sugar, flour, cinnamon, and salt to bowl; toss to combine.
Fill bottom crust with apple mixture; lightly brush edge of crust with water. Place top crust over filling; press all around edge to seal with bottom crust. Using kitchen shears, trim to a 1-inch overhang; fold under itself to form a rim, and press to seal. Using thumb and forefinger, crimp rim.
With a paring knife, cut five small slits in the center of pie; place pie plate on a rimmed baking sheet. Bake 20 minutes; reduce heat to 375 degrees, and bake until crust is golden brown and juices are bubbling, 45 to 60 minutes more. If rim browns too quickly, cover it with aluminum foil. Let cool completely on a wire rack, at least 4 hours (or up to overnight) before serving

cheddar pie crust
Ingredients
Makes two 9-inch crusts
2 1/2 cups all-purpose flour (spooned and leveled), plus more for rolling
1 teaspoon salt
1 tablespoon sugar
3/4 cup (1 1/2 sticks) cold unsalted butter, cut into pieces
1 1/2 cups shredded sharp cheddar (6 ounces)
1/4 to 1/2 cup ice water
Directions
In a food processor, briefly pulse flour, salt, and sugar. Add butter and cheddar; pulse until mixture resembles coarse meal, with a few pea-size pieces of butter reamining. Sprinkle with 2 tablespoons ice water. Pulse until dough is crumbly but holds together when squeezed (if necessary, add up to 2 tablespoons water, 1 tablespoon at a time). Don't overmix.
Divide into two disks. Turn dough out onto a large piece of plastic wrap. Fold plastic over dough; press to shape into a 1-inch-thick disk. Refrigerate until firm, at least 1 hour (or up to 3 days). See Cheddar-Crusted Apple Pie for rolling and fitting instructions

my goal this weekend

my goal this weekend is to make just one of these caps. I figure if its something manageable I can get it done easier than overwhelming myself thus putting it off. I found two shirts in my closet last night that should work, so step number one is down. I'm going to print off the PDF instructions so step number two is almost done.

The caps are going to infants in Haiti as part of a safe birthing kit. I had no idea how high the infant mortality rate was there.

Please if you know how to sew go check it out it is supposed to be really easy and is made with something you already own - and it can posssibly save a baby's life.

Mediterranean Ravioli

I found another keeper for dinners. Something a little different for us that came together really quickly thanks to the premade ravioli.

2 cups peeled eggplant
1 cup chopped onion
1 cup fresh mushrooms
2 cloves garlic
2 tbl olive oil
1 jar spaghetti sauce
1 teaspoon italian seasoning
1 package regireated ravioli
fresh parmesan cheese

cook the ravioli to package directions

mean while saute the vegetables and garlic in the olive oil until tender. The add the spaghetti sauce and italian seasoning.

combine everything together and top with parm cheese

you can bake everything together in a casserole dish if you want at 350 for about 20 minutes but honestly I skipped this step for time and everything tasted fine.

I made these last night and they are definately a keeper in our household - super quick and I think pretty cheap, most of the ingrediants were things we have already in the pantry. And they are ready in under 30 minutes - don't you just love a dish that comes together that quick??

here is the link to the full recipie - they were from Rachel Ray's newsletter. Seriously worth trying out.

2 1/2 cups breadcrumbs
1 1/2 teaspoons salt
1/2 teaspoon pepper
4 large eggs
4 chicken tenders
1/3 cup extra-virgin olive oil
2 tablespoons butter
6 tablespoons hot pepper sauce
3/4 cup crumbled blue cheese

1. Preheat the oven to 425°. In a medium bowl, combine the breadcrumbs, salt and pepper. In a shallow bowl, beat the eggs. Coat a chicken piece with the breadcrumbs, dip in the eggs, then coat again with the breadcrumbs; place on a plate. Repeat with the remaining chicken.
2. In a large, heavy skillet, heat 1/4 cup olive oil over medium-high heat until shimmering. Add half of the chicken tenders and cook, turning once, until golden, about 4 minutes. Transfer to a baking sheet. Repeat with the remaining chicken. Bake until cooked through, about 10 minutes.
3. Microwave the butter at medium power until melted, 45 seconds. Stir in the hot sauce.
4. Place the chicken tenders on a large platter, drizzle with the sauce and top with the blue cheese.

we went to the pumpkin patch last week and T-man had so much fun running around. Amazing how much he has grown over the last year. It was so much more fun to see the experience through his eyes with his amazement and wonder at all those pumpkins. So funny watching him try to bounce on the pumpkins like they were balls (seriously where did that come from). Loved seeing him try to pick up the big pumpkins.

well its been a few days - we moved and I got out of the habit. But I'm back and trying to keep it more current. Will have some home improvement updates that hopefully I can share too.

Here is a project that I have been working on and I LOVE seeing it hanging up. I love how many photos I get to see hanging up. All my favorites. I even left a few spots blank so I can add new favorites too it. Was inspired from Ali Edwards blog a while ago and finally got around to finishing mine.

Like these free recipie cards - how cool would it be for thanksgiving to have everyone update their family recipie and then you could put them together for little mini recipie albums. What a great family keepsake to have. I think it would be a super cute and fast way to put together some mini books.

Fall Wish List

After watching The Biggest Loser last night I'm totally motivated to start eating better & exercising more regularly. After Hurrican Ike seems like I have gained at least 5 pounds (I'm a little scared to step on the scale at this point). But watching the contestants cook better and exercise I'm determined to do something for myself. I am lucky to have the Wii Fit so we need to hook that up and I have some of the Biggest Loser workout DVD's that are collecting dust so need to break those out as well.

Maybe some of these can serve as my motivation for a weightloss reward . . . .

There is a summer photo contest up at mycameraisbiggerthan yours. Some really great summer shots have been posted and the winner gets a blog created that is valueda at $3350. I'm thinking that would really jump start any wishes for a photography business.

One of the best things about Fall is that all the new TV shows come back on. Although I am really going to try and limit how many shows I watch. Sometimes we get in the rut of watching way to much TV. But last night was the Heros premiere - did anyone else watch it?? If you missed it NBC has a 2 minute recap up if you missed it. I admit I was a little confused in certain parts, but can't wait to see what they come up w/ this season.

Stamp Storage

I didn't win, but I did have a lightbulb moment to use something I already have to create my own stamp storage - a storage box for 5*7 index cards that I had left over from my school days. Something that was just collecting dust is now a great place for me to keep all my awesome Studio Calico stamps. I love that I can now see the stamps I have.

Weekend Creativity

Hello - I decided finally to start a blog. I have waited, I suppose because of my own dobuts. What do I have to offer that isn't already out there?? and who would really read my blog?? but decided what the heck, after all nothing ventured nothing gained right??

So who am I?? An avid scrapbooker and amatuer photography. A mom to the best and most adorable boy in the world and wife to a fantastic and loving husband.

Here is a layout I created this weekend - all the supplies were from the Studio Calico Kit Club. I love all there kits and there design gallery rocks!!
